Each ham must cure for at least 14 months. During that time, it gradually loses moisture, concentrating its flavour while developing its characteristic tenderness and aroma.

Before a ham can be called Prosciutto di Parma, it must be inspected to confirm that it meets the required standards.

Those that pass are branded with the distinctive five-pointed Ducal Crown. More than a decorative mark, the crown confirms the ham’s origin and authenticity and assures you that it has been produced according to the traditions of Parma.

It is this protected heritage and attention to detail that separate genuine Prosciutto di Parma from ordinary cured ham.

The Perfect Balance of Flavour

Prosciutto di Parma is prized for its balance. Its flavour is savoury without being overpowering, with a subtle sweetness that makes it remarkably versatile.

For a classic Italian pairing, serve it with ripe melon, fresh figs or creamy burrata. Layer a few slices into a crusty baguette, drape them over pizza after baking or add them to a platter with Parmigiano Reggiano, olives and good bread.

Its delicate flavour also means it needs very little preparation. Allow the slices to come closer to room temperature before serving, then let the quality speak for itself.

Ingredients
  

  • 1 ripe cantaloupe or honeydew, chilled
  • 8 thin slices of Prosciutto di Parma
  • Fresh basil leaves optional
  • Freshly ground black pepper optional
  • Balsamic glaze optional, for drizzling
  • Toothpicks or small skewers

Instructions
 

  • Cut the melon into bite-sized wedges or cubes (about 16 pieces).
  • Tear each slice of Prosciutto di Parma in half and wrap around each melon piece.
  • Tuck in a basil leaf if using, and secure with a toothpick or skewer.
  • Arrange on a platter, sprinkle with black pepper, and drizzle with balsamic glaze if desired.
